Hi Helen, Here are some options for the proposed Dinner-
What was the date for that meeting again?
And what time from was dinner to be served?
And did the subject of cookies come Up?
I am assuming it is not necessary to have all organic ingredients, but I will have some that I think is
important.
1. Chicken and Vegetarian ( tofu) Enchilada Casseroles: black beans, corn tortillas, green enchilada
sauce, cheese, veggies, (bell peppers, zucchini) black olives... with a Green Salad and Balsamic
Vinaigrette, Chips and Salsa
2. Penne Pasta with Sherry/Shallot Sauce and Veggies (Bell Peppers, Mushrooms, Asparagus, snap peas),
Feta Cheese, Chicken Sausage option, Calamata Olives, Capers, Pesto ....with Green Salad and Garlic
Bread
3.Teriyaki Chicken, or Tofu Teriyaki with Pineapple and Rice Pilaf and Salad with Citrus Vinaigrette
4. Coconut Curry Chicken or Tofu Curry with Veggies and served with Jasmine Brown or White Rice and
Naan
5. Chicken or Tofu Subella: A Red Wine/Sherry Marinade with Prunes, Capers, Spanish Green Olives
with Basmati Brown or White Rice and Salad with
6. Vegetable Ragout (Onions, bell peppers, yellow squash, zucchini, tomatoes, fresh herbs and Greek
Olives served over Polenta and Salad with Balsamic Vinaigrette and Dinner Rolls
Note: Salads have mixed greens, red onion (or onions on the side), either tangerine segments, or navel
orange and toasted walnuts, or cashews or pecans.
Salad Dressing are all made by me.
The cost estimate will be $30- 35 per person for 50 people.
I will request a $500 deposit about 2 weeks in advance and it will be applied the final invoice as I shop
early.

We will have volunteers producing the event. Out line the roles and tasks we will need to fulfill toi produce the event
Event Coordinator: That’s us
- Overall management of the event.
- Coordinate with volunteers, vendors, and venue staff.
- Ensure all tasks are completed on time and within budget.
- Serve as the main point of contact for any issues or emergencies.
Volunteer Coordinator: Peter – set up Vol Call
- Recruit, train, and schedule volunteers for the event.
- Assign specific roles and responsibilities to volunteers.
- Provide guidance and support to volunteers throughout the event.
Decorations Team:
- Design and set up decorations according to the event theme.
- Arrange floral arrangements, table settings, and signage.
- Create a visually appealing atmosphere for guests to enjoy.
Food and Beverage Team: Helen
- Coordinate with caterer to ensure timely delivery.
- Set up and maintain beverages.
-Monitor inventory and replenish supplies as needed.

Guest Services Team:
- Greet guests upon arrival and provide event information.

Cleanup Crew:
- Break down decorations and clean up the venue after the event.
- Dispose of trash and recycling properly.
- Ensure the venue is left in the same condition as it was found.
Photography and Media Team:
- Capture photos and videos of key moments and highlights throughout the event.
- Manage social media accounts.
- Create promotional materials and documentation for future use.
Post-Event Evaluation Team:
- Collect feedback from volunteers, vendors, and attendees.
- Evaluate event success and areas for improvement.
- Compile a post-event report for stakeholders and future planning.
